When we stop consuming carbs our body begins using its stored glycogen.
So the weight you lose in a couple of days of reducing carbs is your glycogen and water weight. Then there are also some things called ketones that are produced by your body because of the carbs restriction. They have some diuretic effect which leads to more water loss.
So, now you might be confused about actually how to estimate you fat loss. There are a couple of ways to identify your body fat percentage. One of the methods to identify your body fat percentage is with caliper. Calipers can be found at a local fitness shop. Calipers measure the thickness of your skin at your triceps and then you follow the directions in order to identify your body fat percentage from that number.
You can also use body fat percent calculators on many websites for this purpose. But there are also some more exact ways to find out your body fat percentage such as buoyancy testing and with some special lasers.
So, if your plan is to lose fat and not just weight then do not necessarily trust your scales.
